Owner and Head Baker
Milena moved to Providence from Brooklyn in 2013 and had a hard time finding bagels she loved. Making bagels started as a fun weekend activity and quickly evolved into an obsession.
An MIT-trained chemical engineer, she turned her home kitchen into a lab and meticulously tinkered with every aspect of the bagel making process. It took her 3 months of baking almost every day to achieve her goal: a bagel with just the right amount of crunch, a soft and chewy interior and a deliciously malty crust. It was then that she decided to quit her corporate job and pursue bagel making full time.
Milena likes reality TV, craft beer, gardening, and trying new foods. She's friendly; say hi!
Assistant Head Baker
Chris grew up the the state of Georgia where he learned to cook and love barbecue and good southern comfort food. He loves anything and everything revolving around food, cooking, eating and drinking.
He came to Rhode Island in 2011 to go to school at URI to study Nutrition and Dietetics. After graduating he became a Food Technologist, working in R&D to use his knowledge of food science and the culinary arts to develop delicious food products for the public. When he isn't in the kitchen or the lab, you can find Chris cycling along one of Rhode Islands beautiful bike paths or climbing on the many amazing granite cliffs throughout New England.
